Ingredients (single serving)
1 Scoop of the Red Quinoa Pancake Mix
4 Whites or 2 eggs (vegan alternative: eggs substitute)
Lime juice and zest (1/2 or 1 lime is enough)
Sweetener to taste
Instructions:
Place all the ingredients in the blender. Blend until smooth.
Heat a lightly oiled griddle or anti-adherent pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Golden brown on both sides. Serve the pancakes topped with lime zest and slices and syrup. Enjoy
